An omelet variation with a great melted cheese crust.

Ingredients

egg
2 cups shredded cheese
link sausages, chopped
medium onion
3 tablespoons olive oil
1 large green pepper
1 teaspoon salt
3 dashes black pepper
2 teaspoons dried basil
2 tablespoons milk
2 cups precooked shredded potatoes

Directions

Whisk the eggs with 1/2 the salt and 2 dashes of peeper. Chopt he onion and pepper. Put oven-safe frying pan and put on medium high stove top heat. Turn on the broiler in your oven. Cook the sausage according to the package directions. Saute the onion and pepper adding olive oil if needed. Add the potatoes, and remaining spices. Heat the potatoes through. Add the whisked eggs. Reduce the heat and allow to cook for several minutes. Cover with the shredded cheese and place under the broiler until the cheese is browed. Take out of the oven and let cook briefly. Slice and serve.
